Watermelon Sugar Cookie Truffles!

Those who love cookies will definitely love these watermelon sugar cookie truffles! They are just so firm and yummy with the chocolate coating that no one can resist from having a bite from these adorable watermelon sugar cookie truffles! They are also pretty easy to make so you can make a plan before a reunion or hang out at your place and serve these delicious sweet treats to your friends or loved ones. The recipe is also pretty simple where the main thing is to form the truffles and then assembling all the coating. So let’s get started with making these watermelon sugar cookie truffles!

At first, you have to make the cookies to make them into truffles and for making the cookies, you are going to need 1 16 oz. package of sugar cookie dough, 1.5 oz room temp cream cheese, 4 oz white melting chocolate or 1 cup white chips and 1 tbsp shortening. Bake the cookies according to the package directions at 350 degree F and check if they are baked to crisp but should not be burnt. Cool the cookies completely on a wire rack and then line a baking sheet with wax paper or silicone baking mat. Crumble the cookies in the food processor and then process them until they become a fine crumb. Add the cream cheese into the crumbs and then process until the mixture starts to hold together. Roll the mixtures and as you are going to make the shape of watermelons, make triangles with each of 1 inch balls. Place them on the baking sheet and freeze them for 30 minutes to make them firm and then prepare the melting candy in mugs. You will need pink and white to give the color of watermelon. Melt the candies in 50% power for 1-2 minutes and stir at every 30 second interval until they are completely melted. You will also need some mini chocolate chips and green sprinkles. You can use a mix of green and white coarse sugar to represent the watermelon rind. Now remove the truffles from the freezer and then dip them into the pink chocolate melt first. You can use a fork to do this task and as you have dipped them in the pink chocolate melt, place few mini chocolate chips to represent the seeds. It will only take a few minutes for the pink chocolate melt to set and then dip the bottom of the triangle into the white chocolate melt. Tap off the excess white chocolate and immediately dip the bottom into the sprinkles. You can insert a stick into the bottom of the truffle if you are planning to have them without using your hands. Let the truffles set for few minutes and you are done! Serve these watermelon sugar cookie truffles and let everyone get a bite of this amazing sweet treat!
