To make these meatloaf cupcakes first saute 1 cup chopped onions, 1/2 cup chopped carrot , 2 cloves of garlic (crushed) and a teaspoon of oregano in 1 teaspoon of olive oil. Then combine these ingredients with 1/2 cup ketchup, 1 1/2 pounds beef mince, 1 cup bread crumbs, 2 tablespoons of mustard paste, 1 teaspoon of worcestershire sauce, 1/4 teaspoon crushed black pepper and 2 eggs. Spray a muffin tray with cooking spray and fill the cups with the beef mince mixture. Spread two teaspoons of ketchup on each cupcake. Bake the cupcakes for about 25 minutes at 350°. Then make a mixture of mashed potatoes by combining 4 cups of boiled potatoes in 1/4 cup milk, 1/4 sour cream, 2 tablespoons of butter, salt and pepper. Mash and mix the potatoes to create a creamy paste. When the meatloaf cupcakes are done pipe out the mashed potato mixture on their top. Put some bacon bits and chives on top and voila!
