This amount will make 12 perfect cupcakes and for the blueberry sauce, you will need 2 tbsp granulated sugar, 1 tsp cornstarch, 1 ½ cups fresh blueberries and ¼ cup water. You also have to make the blueberry buttercream with 2 sticks unsalted butter, 2 cups powdered sugar, 1 tsp vanilla extract, 2 tbsp heavy cream, 2 tbsp blueberry sauce and 12 fresh blueberries.
Start with preheating the oven to 350 degree F and grease a muffin tin. Sift flour, baking powder, baking soda and salt in a large bowl. Whisk sour cream, lemon zest and vanilla in another bowl. Beat butter and sugar together on medium speed in a standing mixer and make it a light mixture. Beat in eggs until blended.
Reduce the speed to low and beat in 1/3 of the flour mixture followed by half of the sour cream mixture. Repeat with another 1/3 of the flour mixture and the remaining sour cream mixture. Beat in the remaining flour mixture until just incorporated. Now gently fold in the blueberries and divide the batter evenly among prepared muffin cups.
Transfer muffin tin to oven and bake for 15 to 18 minutes or until wooden pick inserted in cake comes out clean. Transfer muffin tin to a wire rack and let cupcakes cool completely. To prepare the blue sauce, mix all the ingredients in a small bowl and bring to a boil. Reduce heat and simmer until mixture begins to thicken for around 2 minutes. Remove it from heat and let cool completely.
Now prepare the buttercream by beating butter for a few minutes in a standing mixer with the paddle attachment on medium speed. Add powdered sugar and turn your mixer on low and beat until the sugar incorporates with the butter. Add vanilla, heavy cream and blueberry sauce by beating in medium speed for another 3 minutes or until it becomes light and fluffy.
Now frost the cupcakes with the buttercream and drizzle the sauce on top and garnish with fresh blueberries. If you want to add a flavour of chocolate or anything else of your choice, you can just make the required flavored sauce and drizzle it over the cupcakes to get a perfect taste.
