You can add the mint flavor by using peppermint extract of Crème de Menthe. Adding a little green food coloring will give you the confirmation of the mint flavor. A perfectly baked chocolate mint brownie can be cut in different shapes. To make a batch of 25 chocolate mint brownies, you can start with following this simple recipe where you are going to need ½ cup unsalted butter, 4 tbsp cocoa powder, ¼ cup granulated sugar, 1 egg, ½ cup shredded coconut, 2 cups graham cracker crumbs, ½ cup chopped walnuts and 1 tsp vanilla. This will make the crust which is the bottom layer of the brownie. Prepare a 9×9 inch baking pan with parchment paper.
Melt the butter in a medium sized pan with granulated sugar and cocoa powder. Mix in the beaten egg by removing the pan from heat and then add coconut, vanilla, walnuts, graham crackers crumbs. Spread it onto the graham crust and refrigerate for 20 minutes.
For the top layer, you will need 1 cup semi-sweet chocolate chips and 2 tbsp unsalted butter. Melt the butter and chocolate in a double boiler followed by pouring it on top of the middle layer. Tip the pan back and forth to ensure and even layer of chocolate. Refrigerate it for 30 minutes by giving a plastic wrap.
Remove the pan from the fridge and then let it sit until the chocolate gets easy to cut. Now cut the bars in into 25 small squares. You can store these brownies in the fridge for 2 weeks or in the freezer for 6 months.
