To make chocolate cups, you will melt the chocolate and place it upon an object of which you want the shape to be and then when it’s ready, place the cool dessert in it and its ready to eat! To make around 3 chocolate cups filled with mousse, you are going to need ¾ cup whipped heavy cream, 6 ounces quality semi-sweet chocolate chips and ½ ounce espresso or strong black coffee.
You are also going to need ½ tbsp dark rum, 2 tbsp unsalted butter, ½ tsp flavorless granulated sugar, 1 pinch of cayenne powder and chocolate shavings for garnish. You have to start with making the chocolate cups at first and for that you will need to blow up the balloons with air. Blow the required amount of balloons you need and then tie a knot after you fill them with air.
Don’t blow the balloons after your melt the chocolate because you have to work fast once the chocolate is melted. Now chop the chocolate into small pieces before melting and melt it by using a double boiler or microwave. As chocolate burn easily, you should cut them in small chunks and then stir the melting chocolate often.
When the melting chocolate gets smooth and silky consistency, remove it from the heat and then you have to return to the balloons to grab each one of them and dip in the batch of warm chocolate. Cover 2/3 of the balloon with melted chocolate and then place in on a prepared parchment paper to set. After you have dipped all the balloons in melted chocolate, place the tray in the refrigerator to faster the cooling time.
In the meantime, you can make the chocolate mousse filling by combining 1 cup of heavy cream with a tsp of sugar followed by whipping it in an electric mixer at high speed. Measure ½ a cup of whipping cream and refrigerate it to use it later as the topping. Pour ¼ of a cup of the whipping cream into a small bowl and then sprinkle with the gelatin followed by leaving it for 10 minutes.
Combine the chocolate chips, coffee, rum and butter in a double boiler or microwave to mix everything together and when there are still few chocolate chunks visible, combine with a bowl of whipping cream mixed with gelatin to the mixture. Add a pinch of cayenne powder to the mixture and stir well. As the mousse got ready, return to the balloons by checking if the cups got set and then prick the top of the water balloon with a thin needle to release the air. Pull the balloons out when all the air released from them.
Pour the mousse into the chocolate cup depending on how much you want in the required size and then top it with the whipped cream and sprinkles of chocolate shavings. Your chocolate cups are ready but if you want to add something more, you can add handles by melting some more chocolate and then pouring a thin U shape on a tray lined with parchment paper to make a handle. You can use your fingers or a knife to set the shape.
When the handles got set, add them with the cup by adding dobs of melted chocolate and it’s done! Delicious chocolate cups filled with chocolate mousse are ready to eat!
