Pinwheel cookies are favorite to all cookie lovers; especially the kids if you add some colors into them! You will bake these cookies in batches and that wouldn’t be enough because they are so tasty and yummy to look at, one will definitely take a bite and then keep craving for more. It is also an easy solution if you are thinking what you have to serve for any guests who are coming to your place in a short notice.
All you have to do is prepare the dough before and keep it in your fridge. When you are willing to make some, take the dough out of the fridge, slice the required pieces and then bake. That’s all! Pinwheel cookies are also a favorite one because you can make them on any occasion! You can also add colors to follow the theme of the party or event and then serve them accordingly.
For example, you can have green and red for Christmas. You just have to choose the required food color to do this. So let’s get started to know how to make these pinwheel cookies! The basic recipe is made with the combination of vanilla and chocolate where you are going to need 1 cup butter, 1 cup sugar, 2 egg yolks, 2 tbsp milk, 4 tsp vanilla extract, 3 cups flour, 1 tbsp baking powder, 6 tbsp unsweetened cocoa mixed with 2 tbsp melted butter and 2 tbsp milk.
It will take 45 minutes to prepare the dough and 15 minutes to bake so you are going to need only an hour in your hand. Start with melting 2 tbsp butter in 2 tbsp milk for a few seconds in the microwave and then add 6 tbsp cocoa to the mixture and stir it well. Now sift the flour together with the baking powder and then cream butter with sugar until it becomes light and fluffy.
Add the egg yolks one at a time and beat well after each addition. Add the vanilla extract followed by adding 2 tbsp milk and beat the mixture well. Add the dry ingredients and mix well in low speed in a stand mixer. Increase the speed to medium and beat the mixture until the dough leaves the side of the bowl.
Divide the dough and remove ¾ amount of it to keep aside which will be the vanilla dough. Now add chocolate mixture to the remaining bowl and mix it properly to form the dough. Form the both dough’s into ball and slice each ball into two equal halves. Place a waxed paper on a flat surface and roll the vanilla dough into a rectangle of 7X8. Do the same with the chocolate dough.
Flip the rolled chocolate dough onto vanilla dough and peel off the waxed paper. Use the rolling pin to lightly press the surface to make both layers together and then with the short end facing you, roll the dough tightly into a log. Cover the log with plastic wrap and then chill in refrigerator.
Follow the same procedure with the other halves of the vanilla and chocolate dough which will give you the second cookie dough. Keep the logs refrigerated for 30 minutes and then take them out to roll on the counter to retain the circular shape which will prevent one side from flattening.
Wrap the logs again and then place them in freezer-safe container to freeze them for an hour. Next you have to bake the cookies which you can also do later. To bake the cookies, preheat the oven to 325 degrees F and thaw the logs slightly to slice it to about ¼ thickness with a sharp knife. Place the cookies on a cookie sheet lines with parchment paper.
