If you are planning for your kid’s birthday party or want to surprise them with your cooking skills, you can always go for the rainbow effect. This really helps because there are so many colors and they are attracted to colors. Don’t have enough time to make a rainbow cake? No worries! Go for a batch of rainbow cookies which will really mean a lot to them!
You can even make these cookies for your friends and it will be a perfect treat to have with a cup of tea. Baby showers, birthday, theme parties are the best events where you can make these rainbow cookies. Though there are different foods items in which you can bring the rainbow effect, but cookies are one of the easiest one to make among them.
You can make rainbow cookies in different ways. You can have the colors as icing, make rainbow shapes among the clouds, make cookies in different colors from the rainbow and what not. The design of the cookies depends on you. If you want to start with the simplest recipe, you can start with this one which you give you a batch of 40 cookies.
You will need 2 large eggs, 2/3 cup plus 2 tbsp granulated sugar, 2 tsp lemon zest, 10 ounces unsalted butter, ½ tsp table salt, 1 tsp vanilla extract, 3 cups flour, 1 tsp large egg white, food coloring in red, orange, yellow, green, blue and purple colors. Start with placing the eggs in small saucepan followed by covering with 1 inch water and bringing it to a boil over high heat.
Use a slotted spoon and transfer the eggs to ice water and let stand for 5 minutes. Crack the eggs and peel the shell to separate yolks from white where you have to discard the white. Now press the yolks through fine-mesh strainer into small bowl. Add sugar and lemon zest to another bowl and then use finger tips to rub the mixture until it looks like pale yellow wet sand.
Beat butter, sugar mixture, salt and cooked egg yolk in a bowl of stand mixer which should be fitted with paddle attachment. Beat it in medium speed to make light and fluffy and then scrap down the sides of the bowl by using a spatula. Turn the mixer to low and add vanilla and keep mixing it. Add flour and again mix on low speed for 1 minute.
Use the spatula to press dough into cohesive mass. Divide the dough in 6 equal portions. Add food coloring to each piece and mix to achieve desired color. Roll each portion on a piece of plastic wrap into a long strip of about 3×11 inches and ¼ inch thick/ Wrap each strip with plastic wrap and chill for an hour.
Adjust oven rack to upper-middle and lower-middle position and heat oven to 350 degrees followed by lining 2 rimmed baking sheets with parchment paper. Place purple dough on a cutting board and brush with egg white. Place blue dough on top of purple and brush with egg white and follow the same process with the remaining dough in order of green, yellow, orange and red.
Trim the edges and slice dough into ¼ inch thick rectangle. Place cookies 1 inch apart on baking sheets. Bake the cookies for 14-16 minutes by rotating the baking sheets front to back and top to bottom halfway though baking. Cool the cookies on baking sheet for 5 minutes and the use a thing metal spatula to transfer the cookies to wire rack. Let them cook to room temperature.
You can store these cookies in an airtight container for a week. The recipe is quite easy, isn’t it?
