To make them you have to work in three layers of lemon curd, cracker crumb crust and meringue frosting. To make the lemon curd you have to whisk together 3 whole eggs and one egg yolk with one cup of sugar and half a cup of lemon juice. Mix them together and simmer them on low heat until the mixture thickens. Then remove it from the heat and add 6 tablespoons of unsalted butter and one lemon’s zest. Put the curd in fridge. Next make a crust by processing graham crackers, sliced almonds, sugar and salted butter. Then comes the meringue that you have to prepare by whisking together egg whites, sugar, cream of tarter and vanilla extract to peaks. Then put layers of crumbs, lemon curd and meringue and then again lemon curd in shot glasses. After that pipe out meringue again and toast the meringue frosting with a kitchen torch. Serve chill.
