To make this pie first you have to make a dough with flour, salt, white wine and olive oil. Then once the dough is ready put it aside and blanch some spinach, chop it and mix with ricotta cheese. Then add an egg, salt, pepper and grated cheese (cheddar or any other that you like.) Mix all these ingredients to be used as stuffing. Then roll half of the dough flat in a disc shape. Spread this disc on a baking tray and put some stuffing right in its centre in a circular shape. Then make another circle with stuffing around it as shown in the photo. Roll the second half of the dough and put it over the disc with stuffing. Place a small bowl over its centre and press the edges of the pie with a fork. This will do two things; firstly it will give it a design and secondly it will seal the edges too. With a knife make cuts in the outer circle and tilt every section to expose the stuffing mimicking sunflower’s petals. Brush the centre with egg and sprinkle a few sunflower seeds.
