Even if you don’t like healthy fruits, you will definitely love the taste of different fruits together and will make you feel refreshed. Fruit tarts are basically sweet pastry dough baked in a tart pan filled with pastry cream followed by added toppings of your favorite fruits. It is cool, creamy and packed with fruits so there will be nothing that can stop you from eating this amazing dessert after a perfect meal.
Fruit tarts can be made within a very short period with minimal effort. If you are having guests coming over, you can make the dough for the crust before and keep it refrigerated. The pastry cream can be refrigerate too and all you have to do is bake the crust on the day you will serve it and fill it with the pastry cream followed by adding the toppings of the required fruits.
The recipes are also so easy that you can customize it or add new fruits any time. To make the pastry cream for a fruit tart, you are going to need 2 cups half-and-half, ½ cup granulated sugar, 5 egg yolks, pinch of salt, 3 tbsp cornstarch, 4 tbsp cold unsalted butter and 1 ½ tsp vanilla extract. Make the pastry cream by heating the half-and-half, 6 tbsp of the sugar and the salt in a medium heavy-bottomed saucepan over medium heat until simmering. Let the sugar dissolve.
Add the beaten whisked egg, sugar and cornstarch to make it creamy. Stir constantly and when the mixture gets thick, add the butter and vanilla followed by spreading it evenly on the serving pan. Refrigerate it by adding a plastic wrap and then start making the crust. You will need 1 egg yolk, 1 tbsp heavy cream, 1 ¼ cups flour, ½ tsp vanilla extract, 2/3 cup powdered sugar, ¼ tsp salt and 8 tbsp cold unsalted butter.
Whisk the yolk, cream and vanilla in a small bowl then set aside. Process the flour, sugar and salt in a food processor followed by scattering the butter pieces over the flour mixture. The mixture will resemble coarse meal after processing and then add egg mixture. Process it until the dough comes together. Turn the dough onto a sheet of plastic wrap and press into a 6-inch disk. Refrigerate it with a plastic wrap.
To bake the dough, roll it to 1 13-inch round and then place it to a 9.5-inch tart pan. Press the corners and run the rolling pin over the top of the tart pan to remove the excess dough. Prick the bottom of the dough with a fork and then refrigerate it. Bake the dough in a preheated oven in 375 degrees with foil cover. Bake for 30 minutes and then bake it again for few minutes and let it cool.
Choose your favorite fruits in required sizes and then spread the cold pastry over the tart shell and arrange the fruits on tops to make a pattern so that it looks colorful and delicious. You can make the design in round shape or whichever you prefer. And your fruit tart is ready to serve!
