To make one of the most simple and gorgeous fruit pizzas, you can follow this recipe where you will need to make the sugar cookie crust with ½ cup unsalted butter, ¾ cup granulated sugar, 1 large egg, 1 tsp vanilla extract, 1 and ½ cups spoon & leveled flour, ¼ tsp salt, 1 tsp baking powder, ½ tsp baking soda and 1 and ½ tsp cornstarch.
For the topping you will need 8 oz of full-fat cream cheese, ¼ cup unsalted butter, 2 cups confectioners’ sugar, 1-2 tbsp cream or milk, 1 tsp vanilla extract and assorted sliced fresh fruit. You can choose the fruits according to color and taste. You can also categorize them such as berries, lime or any other combination to get a perfect taste.
At first, you have to make the crust by creaming the softened butter for about 1 minute on medium speed in a large bowl fitted with a paddle attachment along with a stand mixer. Then add the sugar on medium speed until fluffy and light in color. Beat in egg and vanilla followed by scraping down the sides as needed.
Whisk together the flour, baking powder, baking soda and cornstarch in a medium bowl and then slowly add the dry ingredients to the wet ingredients in different parts. The mixer should run in low speed and once completely combiner, cover the dough tightly and chill in the refrigerator for 30 minutes.
Preheat your oven to 350 degrees and spray a 12-inch pizza pan with cooking spray. Remove chilled cookie dough from the fridge and press onto the pizza pan in an even flat circle. Start with the cream cheese in medium speed and then add the rest of the ingredients one by one. When the mixture got a smooth texture, spread in a thick layer over the cooled sugar cookie crust.
When you are done with applying the cream cheese frosting, you have to start with decorating the fruits which is the most interesting part. You can start decorating from the edges and make it inwards to make perfect round shapes in different colored fruits. Cutting the fruits in different patterns can also make it look more delicious.
