This recipe will give you around 2 dozen of brownies. You will need 1 pound unsalted butter, 28 ounces semisweet chocolate chips, 6 ounces unsweetened chocolate, 6 large eggs, 3 tbsp instant coffee granules, 2 tbsp pure vanilla extract, 2 ¼ cups sugar, 1 ¼ cups all-purpose flour, 1 tbsp baking powder and 1 tsp salt.
You can coat these brownies with cream cheese frosting where you will need mini candy canes with the straight sides broken off and assorted sprinkles with mini candies for decorating. You have to start with preheating the oven to 350 degrees F. Add butter and flour generously on a 12x18x1 inch baking sheet.
Melt the butter, 16 ounces chocolate chips and the unsweetened chocolate in a double boiler. Stir until it become smooth and then let it cool by keeping aside. Next, blend together the eggs, instant coffee granules, vanilla and sugar in a large bowl. Add and stir the warm butter and chocolate mixture into the egg mixture. Do it slowly and gradually to get the best result.
Get a medium bowl to whisk together 1 cup flour, baking powder and salt. Blend into the chocolate mixture until just combines. Take a small bowl and toss the remaining 12 ounces chocolate chips with the remaining ¼ cup flour. Stir into the chocolate batter and spread into prepared sheet pan. Now bake for 20 minutes and then rap the baking sheet against the oven shelf or counter.
This will help the batter to remove any trapped air bubbles. Bake for 15 more minutes or until a toothpick comes out clean. Make sure that you are not over baking it and when it is done, let it cool completely by placing it on a cooling rack. Once the brownies get cool, then are ready to be cut. Cut them in triangular shapes.
You will need a thin metal spatula to remove the brownie from the cookie sheet onto a platter. Insert a straight piece of mini candy cane into the base of each tree. Scoop cheese frosting or any of your favorite frosting into a gallon-sized freezer baggie. Push frosting into a corner of the bag and cut off a ½ inch piece to create a hole. Use as a piping bag to pipe frosting onto each brownie.

Use a variety of crushed candy canes, small candies and sprinkles to make them look fancy. Refrigerate them to store properly in a tightly covered container.
