To make 2 cups of perfect chocolate mousse, you are going to need 1/3 tbsp of chopped bittersweet chocolate, 1 tbsp water, 1 tbsp of unsalted butter, ¼ tsp of instant espresso powder, 1 egg yolk, 1 egg white, ½ tsp vanilla extract, ½ cup heavy cream and 2 tbsp of granulated sugar.
Start with a large bowl where you have to whisk the heavy cream until it forms stiff peaks and then set in the fridge while you prepare the rest of the things. Grab a small bowl where you have to whisk the egg yolk and sugar for 2-3 minutes. It will become thick and pale in color where the sugar will get dissolved.
Now you have to melt the chocolate by using a double boiler. Add the chocolate in the bowl on top along with the water, espresso and butter. Melt them in a very low heat and cook everything together until the chocolate melts. Now spoon ¼ of the chocolate into the egg yolk mixture and mix it just enough to combine.
Pour the egg yolk mixture back into the small bowl over simmering water in the saucepan with the remaining chocolate mixture. You have to add the vanilla extract and stir the mixture constantly. The mixture will thicken as you have to cook it for a couple of minutes. Stir frequently and let it cool for a few minutes.
At this stage, you have to fold the egg white into the cooled chocolate mixture. This is a tricky part where you have to fold the chocolate mixture into the whipped cream but you can over mix it because it will make the heavy cream lose its texture. Pour the mixture into cups and refrigerate for a minimum of 4-6 hours.
